CATCHES

Catches from the Thracian Sea and the lagoons are among the most characteristic products of Eastern Macedonia and Thrace. Recipes such as salted fish, mackerel, gouna, “married” sardines, mussel pilaf, herring saganaki, wrapped anchovies in vine leaves, and pilaf with anchovies are treasures the gastronomy and tourism of the Region are proud of.

The lagoons of Nestos, Vistonida, the seven lagoons of Rodopi (Fanari, Aliki, Mesi, Arogi, Elos, Ptelea, Limni, and Mitriki), and Monolimni in the Evros Delta, are renowned for their catches.

SALTED FISH

Salted fish, the famous products of the Region of Eastern Macedonia-Thrace, mainly include anchovies and sardines, with raw material from local fisheries or neighboring regions. These products have been mildly processed or canned to ensure a longer shelf life.

Smoked products, such as the grey mullet, a traditional dish with a three-century history from Ainos in Thrace, and mackerel, are smoked using state-of-the-art methods, preserving both their organoleptic characteristics and the color and tenderness of their flesh.
